No Fire Needed S'mores Power Bites!

Happy Wednesday Friends!


The summer is flying by and even though this summer has been different, it's still nice to cling onto those summer traditions that bring you joy! I'm from Virginia and what I often miss most, since moving to New York City, is getting to have campfires in my parent's backyard. Today, I wanted to share a super simple snack time recipe that is packed with protein and yummy goodness and can easily be taken on the go. They also taste like s'mores and you don't even need a fire to make them!


What You'll Need:

  1. 1 Cup Old-Fashioned Rolled Oats (*I substituted Bob's Red Mill gluten-free oats.)

  2. 1/3 Cup Finely Crushed Graham Crackers (*I substituted a gluten-free graham cracker here.) (**To Crush: I broke apart 3 gluten-free graham crackers in a bowl and then finely crushed them with wooden pestle.)

  3. 2 Tablespoons Chia Seeds

  4. Pinch of Salt

  5. 1/2 Cup Creamy Peanut Butter (*If you have a peanut allergy in your family, you can substitute any nut butter of your choice, just make sure it's super creamy because this binds all the ingredients together!)

  6. 1/4 Cup Honey

  7. 1/2 Teaspoon Vanilla Extract

  8. 1/4 Cup Mini Chocolate Chips (*I used semi-sweet but if you prefer milk or dark chocolate, you can also use those.)

  9. 1/4 Cup Mini Marshmallows (*1/4 cup was a good start but I poured a few extra in once I mixed the rest of the mixture.)


Combine all ingredients in a large mixing bowl and stir with a rubber spatula until all ingredients are mixed together thoroughly. Dry ingredients should be fully covered and moist from peanut butter and honey.



Next, line a standard sized baking sheet with parchment paper. Using your hands, begin rolling the mixture into tiny balls and place them evenly apart on the baking sheet. Then, place them in the refrigerator for 45 minutes. After 45 minutes, remove the s'mores oat bites from the baking sheet and place them into a container that can be sealed. You can store them in the refrigerator for up to 2 weeks. Enjoy this deliciously easy snack that is perfect for a breakfast buzz or an afternoon pick me up. They are loaded with protein and nutrients that will keep your little smiling and satisfied and energized for playtime!
