Happy Tuesday!
Summer is here and cold, frozen treats are one of the best parts about summer in my opinion...:)! This cosmic yogurt bark is not only delicious, but incredibly easy to make AND nutritious!
What You'll Need:
1 1/2 Cups Yogurt (*I used plain greek yogurt but you can use a dairy free yogurt option as well. You also can use a vanilla or honey flavored yogurt.)
1/3 Cup Frozen Raspberries
1/3 Cup Frozen Blueberries
1/3 Cup Frozen Dragonfruit (*Any frozen fruit will work in place of the raspberries, blueberries, or dragonfruit. I chose these specifically because of their vibrant colors.)
2 Dates (*I used dates to add some natural sweetness since my greek yogurt was plain. I had dates with pits, so I removed the pits before use. You can also use honey, vanilla extract, maple syrup, or agave to add sweetness as well.)
Coconut Flakes (*I used these as "sprinkles" to top the bark. Actual sprinkles or chocolate chips are also great options!)
A 9X9 Inch Backing Dish
Parchment Paper
A Blender
A Spoon/Rubber Spatula
3 Small Bowls
Step 1: Separate your 1 1/2 cups of yogurt into your 3 bowls (1/2 cup in each bowl). Split your 2 dates evenly between all 3 bowls. Add your 1/3 cup frozen raspberries to one bowl, your 1/3 cup frozen blueberries to the second bowl, and your 1/3 cup frozen dragonfruit to the third bowl.
Step 2: In your blender, blend up all 3 bowls separately. Blend until all frozen fruit and date is broken down and mixed fully. Yogurt will take on the color of the fruit. The mixture may be a bit runny. Pop the bowls with the yogurt mixtures inside the freezer to thicken them up a bit while you're completing the next step.

Step 3: Line your 9X9 inch baking dish with parchment paper.

Step 4: Remove your bowls of yogurt from the freezer. Take your spoon and begin adding small circles of each of the 3 colorful yogurt mixtures to your baking dish. Evenly disperse and separate out each color. Then, take your rubber spatula and gently swirl together the separate colored circles (*Be careful of over-mixing them together. You want to keep some depth and difference to your colors for a cool cosmic or tie dye look). Then top the mixture with coconut flakes.
Step 5: Freeze for 4 hours. Once frozen, pull bark apart and into pieces and enjoy!
