I hope your week has been full of laughter and hope. Today is our last day posting for this week as our online programing will be closed tomorrow for the holiday. Happy spring holidays to us all :)
I thought we’d change things up today and I could provide you guys with the easiest, most simple, most wonderful instant banana bread. You can make it to share with your child for a fun breakfast, eat alone in the bathroom with your afternoon coffee, or 2am with white wine - no judgement here!
Here’s everything you need to make a banana bread mug cake:
a ripe banana
an egg
a bit of oil
a bit of milk
a bit of flour
cinnamon
Just smash up a banana in your mug of choice. If you pick an extra big one you might be able to convince your toddler that your cake is actually just your yucky coffee and they won’t want it — probably not though they’re smarter than us.
Mix in one egg, a splash of milk, a teaspoon of oil, about a tablespoon of flour, and some cinnamon. I just eyeballed my whole recipe and my cake turned out a little wet but still very delicious. So learn from my mistakes and maybe add more flour than you think you need. The best part is there is no sugar needed for this recipe. If you’re fancy you could add a tsp of vanilla or a few chocolate chips but they’re not necessary by any means.
Next you just nuke it. I checked on my mug after 90 seconds and went ahead and added a full minutes after that before I took it out.
And it really was that easy! I topped mine with a few chocolate covered almonds.
Some Nutella or almond butter drizzled on top would also be a great choice!
