These homemade broccoli bites are simple and perfect for a quick veggie filled lunch-- for both you and your child! They're also great to freeze in bulk and reheat :)
Here's what you'll need for these broccoli & cheddar nuggets:
1 head of broccoli
2 cups of shredded cheese
2 tablespoons of flour (option: almond flour ~ for low carb cheesy goodness)
2 eggs
paprika to taste
salt & pepper to taste
Step by step guide to deliciousness:
First, you'll need to blend about a head's worth of broccoli. I used half of a bag of frozen broccoli that I had sitting in my fridge. I thawed it in the microwave and then stuck it right in the blender and it turned out perfectly-- no food processor needed!
Next combine the broccoli bits up with about two cups of shredded cheese, 2 table spoons of flour (I used almond flour!), about 2 eggs, and then season with salt, pepper, & paprika. Then you're ready to start scooping!
Mixture is not cat friendly, though cat may be very friendly.
Now just spray a mini muffin tin with cooking oil and fill the tin, pop in the oven at 375 for 20-30 minutes, and lunch is ready!
Pro tip: I broiled mine an extra 5 minutes to get an extra crispy top...
